        Horseradish Root.

        Horseradish Root.

Horseradish (Armoracia Rusticana) is native to South Eastern Europe, but is widely naturalised in Europe, North America and New Zealand. It has entered cultivation relatively recently; less than 2,000 years ago. It was primarily a medicinal plant and did not become popular as a flavouring until late in the sixteenth century. Armoracia is the Latin name for wild radish.

Flavour: Very pungent & fiery herb.

Use with: Add young leaves in salads. Use grated root on its own, or with apple, as a condiment for fish, or with vinegar & cream to accompany roast beef, cold chicken & hard boiled eggs.Horseradish is mixed with beets to make E.European condiments.Slice & fry to make your own crisps or chips.

Cultivation: If you are unable to use the whole root why not plant the remaining piece in a well drained, rich soil,in sun or partial shade. Horseradish is very invasive so give it plenty of room to expand into because once established it is hard to eradicate.

Harvest: Pick young leaves in spring. Lift roots in autumn.
